Lemon and Poppy Seed Muffin Recipe

Hey, so today I have my own lemon and poppy seed muffins. They taste really lovely and are great to make as well as eating. I came up with this recipe when I went to make some with a cook book recipe but I didn't have half the ingredients So I came up with my own one. I have made this once  before and they turned out really well. There is a lot of pictures which I hope you will enjoy.

3 eggs
as much lemon juice as  you want
roasted 2 tablespoons poppy seeds
gluten free self raising flour 200g
20g Plain flour
175g caster sugar
180g butter melted but cooled
1tsp xanthan gum

Step one:
Weight out all ingredients (this just makes me much easier to do as you are going along).

Xanthan Gum 
Gluten free Baking Powder
Gluten free flour
Caster sugar
Step two:
toast off the poppy seeds in a small pan. I just used a small pan and estimated roughly 2 large tablespoons.

Step 3:
Put all the dry ingredients into a bowl and mix them together. This includes the poppy seeds, flour, sugaar, baking powder, Xanthan gum,

Step four:
Melt the butter in the microwave and leave to cool for a few moments.

Step five:
Add the melted butter to the dry mix and mix well.

Step 6:
Crack 3 eggs in a bowl and beat them well, then add them to the mixture.

Step Seven:
Add as much lemon juice as you want now and mix well.

Step eight:
Put some muffin cases in a tin and also and add the mixture to the muffin cases.

Step Nine:
Add them in the oven at 180°C for around 20/25 minutes or until you can put a knife in the muffin and in comes out clear and clean.

They taste amazing and they are Gluten, wheat, milk, nut free and can be made dairy free if you use dairy free butter.
